Xinestosu has a great cheesy tradition, nowadays lacking. In spite of that, some neighbours can explain the production process ofthis cheese, that was first elaborated with cow and goat milk. Nowadays, there are some reminds of this work in the ‘ol.leras’ (a kind of stone cupboard to store milk churns).
